DESCRIPTION

In brief, the Nano4Food Unit focuses the activity in the following Research Domains:

Nanoencapsulation technologies for enhancing bioavailbility and functional properties of bioactives. New blends with food grade biopolymers and emerging encapsulation technologies such as vibrational atomization and eletrospinning/electrospray are studied.

Active/Intelligent Packaging solutions for the on-demand release of food preservatives, and capable of providing visual information on the actual condition of the food product.

New functionalities and applications from tailored nanostructured food grade materials able to provide new rheology properties, textures and functionalities are studied to obtain personalized and printable food for a target population.

Biosensors, microfluidic devices and integrated lab-on-a-chip solutions for food quality, safety and, authenticity purposes. New DNA based technologies ((e.g. LAMP, RPA, LCR) and their integration into microfluidic devices are studied.

Specific objectives by challenge of the Nano4Food Unit:

1. Healthy Ageing: To develop functional food and textures improving the quality of life of the elderly;

2. Sustainability: To contribute to a more efficient utilization of natural resources (agricultural, water, food) by developing control, monitoring and processing solutions and reuses of food waste materials;

3. Wellbeing: To improve the quality of life of citizens (with particular emphasis in the elderly) by developing safer and healthier water and food as well as advanced bioengineered solutions to face food related diseases.

RESEARCH GROUPS

The group aims to develop sensors, and devices for control and monitoring food risk (pathogens, allergens) and authenticity based on a combination of Molecular Biology and Microfluidic technologies

The group works in developing edible, active and intelligent food packaging as well as in improving the functionality of bioactive food ingredients by using innovative encapsulation technologies. Food grade biopolymers are structured at the nanoscale to obtain printable ingredients that provide new food properties, textures, and sensations

DESCRIPTION

The food system is facing important challenges in the near future. Agriculture, processing industry and distribution need new solutions to overcome the limitations of traditional technologies in Food sector. Nanotechnology will play a role in providing innovative solutions for feeding a growing population, extract data from the food chain and personalize foods. Food Unit is focused on the development of different solutions using nanotechnologies for food quality, safety, authenticity and processing.
