Food Processing and Nutrition
Rui Pereira is a Research Fellow in the Food Processing and Nutrition group. He is currently working on the project entitled “cLabel+: Alimentos Inovadores “clean label” naturais, nutritivos e orientados para o consumidor”, which aims to respond to the challenges the final consumer poses to the food industry. His research is focused on the development of stable nanoemulsions using alternative ingredients from vegetable sources.
Rui is a Biochemist and holds a Master’s Degree in Food Biotechnology from the University of Aveiro. His experience includes developing and improving food products for industry, with emerging food additives and processes.
