Food Processing and Nutrition

Victor Souza has been a Research Fellow in the Food Processing Group since 2021. His research is focused on the development of bio-based films and coatings for food applications, particularly using biodegradable polymers from renewable resources and nanotechnology to reinforce their properties. His main objective is to apply such technologies to extend the shelf life of perishable food items.

Victor Souza holds diploma in Food Engineering (2008) and Master degree (2014) in Food Science and Technology both from Federal University of Viçosa (Brazil), and PhD degree (2018) in Food Quality from NOVA University of Lisbon (Portugal). He was a research fellow in an ERANETMED project developing novel applications for the by-products of the Opuntia spp. Production. As a result of his research activity, since 2014, he has published more than 30 articles in international peer-reviewed journals indexed in the SCI and 8 book chapters attracting a high number of citations (listed in 2023 Stanford University World's Top 2% Scientists List.) corresponding to a Scopus h-index of 21 (to date).
